Bruschetta with young olive oil mayonnaise

Ingredients
  • 1 dcl young olive oil
  • 1 egg yolk
  • 10 grams of salted capers
  • 2 salted sardines
  • 1 clove of garlic
  • 1 market bunch of basil
  • 4 slices of toasted bread

Gradually and slowly pour the oil into the yolk whilst constantly whipping until you achieve the consistency of mayonnaise. All of the other ingredients, finely chopped, are mixed into the mayonnaise. The chilled mayonnaise is spread on hot bread. A young Teran wine is served with the bruschetta.
