Fusi (Fuži in Croatian) is a traditional Istrian pasta. What leads to fusi's famous bow shape is a unique process that starts with rolling-out the pasta dough into a thin sheet, which is then cut into thin strips. Three to four cm wide stripes are then placed over each other and cut diagonally to form a diamond shape, which is then folded in the middle. Fusi are usually served with a mild red meat (wild game, beef, chicken, or veal) sauce that is a perfect mixture of onions, tomato paste, white wine and broth.
