The cleaned shrimp are very lightly fried on olive oil and are served with a topping of Malvasia sauce and mousse. For the mousse whip the egg whites and mix in Malvasia and salt. For the sauce mix the oil, lemon rind, lemon juice and chopped parsley with the hard-boiled egg yolks. Served with toasted white bread and a mature and robust Malvasia.
